My Favorite Healthy Cookies

I am incredibly excited to bring you one of my favorite recipes- oatmeal chewies!


I pretty much make these cookies every week and munch on them with coffee, after dinner, or ya know as a breakfast snack ;)


The original recipe came from my mother and used refined, processed ingredients such as vegetable oil, brown sugar, and quick oats. I switched out these unhealthy ingredients for nutrient-dense options to create a perfectly balanced and delicious cookie!


I seriously love having these cookies with coffee or tea- it's a particularly amazing flavor profile.

RECIPE:


2 cup rolled oats

1 cup packed coconut sugar

1/2 cup coconut oil (melted)

1 egg slightly beaten

1/2 tsp. salt

1/2 tsp. vanilla extract

Combine all ingredients in a bowl, mix.

Drop by tablespoons onto greased cookie sheet.

Bake at 325 for 12-15 min or until lightly browned.

Cool for 5 min. on cookie sheet.

Yields- 2 1/2 dozen
